I think I can easily say that the popsicle mold I bought earlier this summer has been the wisest investment I’ve made all year. With the end of the heatwave that’s hit SoCal nowhere in sight, I’ve been heavily putting it to use and cranking out all sorts of popsicle recipes. Although I wish that I could have shared all of those recipes with you on the blog, my desire to devour these frozen treats has heavily outweighed that of documenting the process of making them.

Luckily for you, I did manage to put together this simple and delicious recipe for Peach and Honey Popsicles. The combination of peaches and honey in this recipe gives off a tangy and sweet taste that is both delicious and refreshing, making these popsicles exactly what you need to cool off on a hot summer day.
To give you an idea of how hot it’s been around this part of the world, these popsicles were only out of the mold for only about 4-5 minutes before they started to melt. Thankfully, I was able to pop them back into the mold and put them in the freezer before they ended up in a huge puddle on the tray I was photographing them on.

Refreshing Honey Peach Popsicle Recipe

Peach and Honey Popsicles

INGREDIENTS:

4-5 medium peaches
1/2 cup of honey
1 cup of water
You’ll also need:
Popsicle sticks
Instructions:
1. Blend the ingredients until you have a puree mixture.
2. Next, pour the mixture into the popsicle mold and add popsicle sticks.
3. Finally, pop the mold into your freezer for a 3-4 hours or until the mixture hardens. When you’re ready to devour these frozen treats, run the mold under warm water so that each popsicle slides out more easily.

As you’re reading this post, I’m probably on the road and on the way to my new home, the city of Portland.
